Three Ways to Try Our Veggie Toad in the Hole

Do you follow a vegetarian diet?

If not, National Vegetarian Week is the perfect opportunity to give a meat-free diet a go. There are so many fantastic, readily available, vegetarian alternatives (just like our meat-free Toad in the Holes of course 😉), so seven days without meat no longer seems so daunting. Currently, around 14% of adults are following a meat-free diet, that’s 7.2 million of the British population! It can’t be all that bad? 👀

And if you’re already vegetarian, this week is a great opportunity to get more experimental with your cooking and try some new recipes. This is where we come in!

Our Meat Free Toad in the Hole is the way to go if you’re looking for a delicious, classic veggie meal. Don’t be afraid to tuck in at any time of the day; lunch, or dinner, we’re not judging.

So, it’s time to stray away from the traditional, here are three ways to try our Toad in the Hole (other than with mash, peas and gravy) provided by the wonderful recipe writer Nadia, from Nadia’s Healthy Kitchen…

🍓 Strawberry Spinach Salad with a balsamic dressing 🍓

 This side dish is colourful, fresh and perfect for summer. With the warmer weather approaching, this simple recipe will be a certain crowd-pleaser at your next garden party 👇

For the salad:

227g strawberries, chopped

100g spinach

2 tangerines

25g vegan feta

A handful of hazelnuts, chopped

 For the dressing:

2 tbsp balsamic vinegar

1 tbsp lemon juice

1 tbsp olive oil

Sprinkle of salt & pepper

Method:

Toss the chopped strawberries, spinach and tangerines into a bowl, then top with the chopped hazelnuts and crumble on the feta cheese. When ready to serve, pour over the dressing and enjoy!

🥦Pan-Roasted Broccoli with feta 🥦

 Who said healthy food has to be boring?

Pan-roasted broccoli with lemon, garlic, feta, and parsley. Yum. Give this side dish a go if you’re looking for something nutritious AND full of flavour…

1 head of broccoli, chopped into small florets

1 garlic clove, crushed

1 tbsp water

1 tbsp lemon juice

Salt & pepper to taste

25g feta cheese (vegan or regular)

2 tbsp chopped fresh parsley

Optional – a sprinkle of chilli flakes

 Method:

Heat 1 tbsp of water and 1 tbsp lemon juice in a pan, then add the broccoli florets. Season with salt and pepper and cover. Cook on a low heat for 5 minutes, stirring occasionally. Uncover and add the garlic, then cook for a few more minutes until you have the preferred texture.

Take off the heat and crumble on top of the feta cheese, parsley and chilli flakes. Give everything another toss, then serve!

🌶️ Turmeric Potatoes and Herby Peas 🌶️

Crispy turmeric potatoes and herby peas, what a combo 🔥 Packed full of herbs and spices, this recipe will go down a treat. Next family dinner? Sorted 👇

For the turmeric potatoes:

450g potatoes, scrubbed and cubed

1 tbsp olive oil

1 garlic clove

1 tsp turmeric powder

½ tsp chilli powder

Salt & pepper to taste

A handful of chopped fresh parsley

Method:

Add the potatoes to a pan and cover with boiling water. Simmer for 10-15 minutes, then drain.

Heat 1 tbsp of olive oil in a frying pan and cook the garlic for 1 minute, then add the turmeric, chilli and lemon juice. Add the potatoes, season to taste with salt and pepper and give them a quick toss, then cover and leave to cook on low for 5 minutes.

Take off the heat, then sprinkle on top the chopped herbs and serve.

 For the herby peas:

400g frozen peas

2 tbsp cream cheese (vegan or regular)

1 garlic clove

1 tbsp lemon juice

3 tbsp chopped parsley

3 tbsp chopped mint

3 tbsp chopped coriander

¼ red onion, chopped

Chilli flakes

Method:

Add the peas to a saucepan and cover with boiling water. Simmer for 3-5 minutes then drain.

Heat 1 tbsp olive oil in a large pan and cook the garlic for 1 minute, then add in the peas, cream cheese, lemon juice and season with salt & pepper.

Once the cream cheese has melted and evenly coated the peas, take off the heat and add the herbs, onions and chilli flakes if using any.
