A Warming Winter Recipe – Yorkshire Pud Pies

Okay, so it’s not technically winter yet, but the colder temperatures are making us wish we were curled up in front of a fire. Or, better yet, eating some hearty, warming puds 🤤❤️‍🔥

The incredible Amy Sheppard, @amysheppardfood on Instagram, has created a recipe for cheese, potato and onion pud pies (aka everything you need in winter comfort food). To find out how to make these for yourself, read her recipe down below 👇

Ingredients – Serves 4-6 people (or 1 pud fanatic):

  • 8 The Real Yorkshire Pudding Co Yorkshire Puddings (frozen)
  • 1.2kg maris piper potatoes (peeled and cut into medium pieces)
  • 4 medium sized onions (finely sliced)
  • Oil for frying
  • 2 tsp dijon mustard
  • 1 tsp chopped fresh thyme leaves (optional)
  • 60g fresh spinach roughly chopped
  • 100ml milk
  • Heaped dessert spoon of butter
  • 100g cheddar cheese grated (plus a little extra to sprinkle over the top)

Step 1:

Peel and cut the potatoes 🥔 and place them in a saucepan filled with cold salted water. Bring the water to the boil. Simmer on a low heat for around 20 minutes, or until tender enough to mash.

Step 2:

Finely slice the onion 🧅 Heat a drizzle of oil in a large non-stick frying pan. Place the onions in the pan and fry on a low to medium heat for 10 minutes or until soft and translucent.

Step 3:

Heat the oven to 200C 🔥 Drain the potatoes and mash them with a fork or potato masher. Add the spinach, butter, mustard, milk, thyme leaves, grated cheese and fried onion to the potato.

Step 4:

Season with salt and a generous grind of pepper. Stir until all the ingredients are combined and the potato is smooth and creamy 🥣

Step 5:

Place the Yorkshire puddings on a large baking tray and fill them with the hot potato mixture. Sprinkle the top with a little grated cheese and a little more ground black pepper 🧂

Step 6:

Place in the oven for 5 minutes (You can finish them off under the grill for a couple of minutes if you want the cheese to go golden brown).

Step 7:

Tuck in to some cheesy, potatoey, puddy goodness 🤤

 

 

 

 

 

 

 

 

And there you have it – some delicious and warming pud pies to bring some comfort to colder nights 🥶 Top with gravy for some extra saucy goodness (if you like) and serve them however you fancy!
