This weekend we celebrated #WorldFoodDay 🎉
Nadia’s Healthy Kitchen inspired us with a recipe that is the perfect fusion of her Middle Eastern and English backgrounds 👏
Her Middle Eastern White Bean Stew is served in Large Gluten Free Yorkshire Puddings with a side of Tabbouleh 😋
✨ White Bean Stew Recipe ✨
👉 1 x 400g can white beans, drained and rinsed
👉 1/4 onion, chopped
👉 2 garlic cloves
👉 2 tbsp tomato purée
👉 1 vegetable stock pot
👉 235ml (1 cup) water
👉 1 tsp Lebanese 7 spice
👉 1 tbsp lemon juice
👉 Black pepper
👉 Fresh coriander to serve
👉 4x Large Gluten-free Yorkshire Puddings
🍴 Heat 1 tbsp oil in a pan and sauté the onions for 5 minutes, then add in the garlic and beans and cook for another couple of minutes.
🍴 Add the tomato puree, stock pot, water, spices, lemon juice and a sprinkle of black pepper.
🍴 Bring to a quick boil, then cover, lower the heat and simmer gently for 10 minutes.
🍴 Prepare the Yorkshire Puddings according to pack instructions.
🍴 Spoon the stew into the baked Yorkshires and enjoy!
