A #WorldFoodDay delight 🙌

We challenged @lunchingwithlaila on Instagram to create a recipe with an American inspired twist on the classic Yorkshire pudding 🎃

✨ Pumpkin Pie Puds Recipe ✨

👉 1/2 small pumpkin
👉 Ground cinnamon
👉 Ground ginger
👉 1/3 block of tofu
👉 3-4 tbsp Maple syrup or honey
👉 2 tbsp coconut oil
👉 4x Large Gluten Free Yorkshire Puddings
👉 Biscoff spread

🍴 Halve a pumpkin, remove the seeds and sprinkle with cinnamon and ground ginger.
🍴 Bake for around 45 mins until soft.
🍴 Scoop out the inside and blend into a purée.
🍴 Blend 1/3 of a block of tofu and stir in (a classic vegan alternative for adding texture).
🍴 Add 3-4 tbsp of maple syrup or honey and 2 tbsp of coconut oil. Stir well.
🍴 Meanwhile, bake the Yorkshires for 5 minutes.
🍴 Spoon in your pumpkin filling and leave to set in the fridge overnight.
🍴 The next day, heat the puddings and drizzle with a Biscoff topping and you’re good to go!
